Beat It - Then Eat It

 

 You prepare this the night before and all you have to do is put it in the oven.

 

Scrambled Egg Casserole

2 tablespoons butter

2 1/2 tablespoons flour

2 cups milk

3/4 teaspoon salt

1/8 teaspoon pepper

1 cup American cheese,shredded

1 cup cubed ham

1/4 cup green onion, chopped

3 tablespoons butter, melted

1 dozen eggs, beaten 

1 cup sliced fresh mushrooms

1/4 cup butter, melted

2 1/4 cups soft bread crumbs

    To make the cheese sauce, melt butter, blend in flour and cook for one minute.  Gradually stir in milk; cook until thick.  Add salt, pepper, and cheese; stir until cheese melts.  Set aside.  Saute ham, mushrooms and green onion in three tablespoons butter until onion is tender. Add eggs and cook over medium heat until eggs are set; stir in the mushrooms and cheese sauce.  Spoon eggs into greased 9 x 13 inch pan.  Combine topping ingredients; spread evenly over egg mixture.  Cover; chill overnight.  Uncover; bake at 350 degrees for 30 minutes. 

Serve with Canadian bacon, bacon or sausage on the side, fresh fruit, and a homemade muffin.

It was fun to have the Masters kids, but everybody got colds.

Always looking for another egg casserole.  My kids probably wont go for the mushrooms, so I might leave them out.  Will give it a try Thanks
